It's not Thanksgiving for me without any cranberry sauce. Homemade. By my mom. It's bitter, tart, sweet, and I love how it goes well with turkey, and with a slice of bread. Even in tea. My mom made extra so I could take back with me a tupperware-full of cranberry sauce. A little extra sugar to help me get through the day.<br />

I love having an oven. It's fun having different methods and tools for cooking. With these vegetables I put in a dash of olive oil, but the second time I made them, I didn't and they tasted just fine. Salt and pepper is a must, and I put in some herbs de Provence as well. You can eat them as is, or have them with pasta. I wish I had some cheese and crackers! Brie cheese with roasted peppers? After weeks of having cereals on the go, I decided to change things up a bit. It has been a goal of mine this month to make homemade granola, and today was the day. I like to keep things simple, and so my granola only has oats, cranberries and some walnuts. Recipes that I saw called for 3 cups of oats, but liking the idea of having fresh breakfast, I decided that 1 cup worth of granola would be enough for me. If I run out I will just make more. It takes about 10 minutes for a cup of oats. This recipe makes a non-chunky granola, and can be mixed in with yogurt, or just eaten as plain cereal. Mmm!<br />

Fresh Granola<br />

Ingredients:<br />
-1 cup of oats<br />
-1/2 tsp of olive oil<br />
-3 tbs. of honey<br />
-a handful of cranberries (or dried fruit of your choice)<br />
-chopped nuts (walnuts or almonds)<br />
<br />
Preheat oven to 350 degrees F. In a bowl, stir oats, honey, nuts, and olive oil. Mix well until the oats get a little clumpy. Lay out the mix on parchment or foil and bake for 10 minutes, or until golden brown. *You want to mix in the cranberries AFTER the oats have cooked.<br />

Made potato chips! Simpler than I thought. Slice them about 1/8 inch thick and toss them around in a little olive oil and salt. It takes 30min+ with an oven temperature of 400. The cold kicked in, and as a seasonal trend, I CAUGHT the cold just like everyone else on campus. Lame! But life goes on. I have a midterm on Monday so I've been trying to study. It's so hard though when your mind is elsewhere, wanting to craw back into the warm sheets. But even on a bad day coffee seems to help brighten things up. Not for the energy rush, but I really love the smell of freshly brewed coffee. Wow am I that old? No not even. But I'm getting there. Went to the annual Octoberfest held the the one and only Oregon State Univ.'s Food and Fermentation Science Club this Friday. The atmosphere was great, being surrounded by food enthusiasts, brewers, and of course the eaters....like me! On a sunny day like this, I wanted a picnic-like lunch that is light, crunchy, and simple. I made a tuna patty with diced celery and onions. I drained the tuna from the can, and after mixing in the ingredients (celery, onion, salt, pepper, 1tsp oilve oil) I took a handful and squeezed out the remaining water to make this patty. I like strawberry jam, but I also like raspberry jam. The seeds can get a bit annoying, often getting stuck in between teeth, or taste bitter when you chew on it. I was watching "Giada at Home" on Hulu, and I saw that she had jam jars like these in her refrigerator. And yesterday when I went to Fred Meyers I saw these and noticed they were labeled 'reduced price' and let's just say I had to get it. Well this recipe reminds me of home. It is so simple and so good. Just slice the zucchini a thin or thick as you like. I personally like quarter inch to be exact, but if I had a bigger zucchini, I probably would have sliced thicker portions. Here's the 'how-to':<br>

Hmm whats for lunch? Well I STILL had some leftover peppers....they were becoming a little too ripe so I decided to grill them lightly. Then I remembered my mom made sandwiches before with grilled peppers, so thats exactly what I did. Except with english muffins. I was surprised of how well this combination turned out. First, it wasn't a baguette, so when you bit into the sandwich, the insides didn't slide out. From experience, unless you have a perfectly toasted, right-out-the-toaster baguette sandwich you will find yourself multitasking, trying to reconstruct your sandwich, and trying to eat it at the same time. Not this one!<br>

Came back from a great weekend in Portland! Saturday turned out to be warm, and the Beavers had their first win of the season. At Portland, my sister and my dad and I went out to Olympic Provisions for lunch. The atmosphere and service was great, however, this sandwich (with ham, mustard, pickled zucchini, sliced olives and peppers) was a little too salty for me. I wish there was lettuce, tomato, or something to balance the salty-ness of the ham. On Sunday morning, we all went to Lovejoy Bakers to eat the Lovejoy Deluxe. Mmmmm. Picture? What? Rain, shine, partly cloudy...that's Oregon! Well, mostly rain lately. And of course it downpours right when I'm about to walk to class. Temperature is begging to decrease gradually and more people are transitioning into fall-winter mode. But according to my weather app on my phone its supposed to be 70 degrees ferinheight this Saturday. When it doubt, prepare for the rain in Oregon. An extreme amount of "doubt"....practically skeptical of this announced nice weather. Earlier this week I bought some english muffins and I've been enjoying them with strawberry jam. I don't have a toaster, so I warm it up in my skillet. I felt as though if I was camping, with a hot cup of coffee in my hand, and my cell phone in the other....oops! Oh, technology these days.</div>

On a more serious note, speaking of technology, rest in peace Steve Jobs, who has changed my world, as well as the lives of millions of others. He did indeed make a "dent in the universe."<br />

Bought a bag filled with crispy, colorful mini peppers this afternoon. They looked delicious as is, so decided to chop up a quick salad together with some ice burg lettuce and sesame dressing tonight. Also, I had some white rice left over from last night, so I made fried rice with onion, turkey, a teensy bit of garlic, and soy sauce. Take a look!<br>
