The Undergrad:

A full time student, and a proud procrastinator, I will blog about my cooking experiences from my better-than-dorm apartment. Because now, I have my own kitchen. Ha! And of course bits and pieces of daily finds and interests here and there at Oregon State Univ.

Mini Pepper Salad

Bought a bag filled with crispy, colorful mini peppers this afternoon. They looked delicious as is, so decided to chop up a quick salad together with some ice burg lettuce and sesame dressing tonight. Also, I had some white rice left over from last night, so I made fried rice with onion, turkey, a teensy bit of garlic, and soy sauce. Take a look!

Fried Rice

Tonight along with the mini pepper salad, I made the most simple yet tasty fried rice. My mom will be proud!

Good Morning, Corvallis!

Good Morning, Corvallis! by Kitchen Undergrad

The last few days were a bit lousy, but looks like it will be a warm day. It's the best though, when you wake up early, peek outside, and look out to find a cloudless morning. Well, gotta make some coffee and get ready for class!

Have a wonderful day!

Wild, Wild Rice

Wild, Wild Rice by Kitchen Undergrad

I cooked some wild rice in the skillet, and poured some soup in. Mmmm. Veggie soup with rice! What a classic. The rice itself is a bit bland, so to add more flavor, I added a teensy bit of chicken bouillon to the water. Maybe I'll have some more soup later....I bet the rice soaked up the broth!

Veggie Soup in a Skillet

Veggie Soup in a Skillet by Kitchen Undergrad

On the last day before school, my sister put together a simple, yet delicious soup. The roughly chopped veggies melt in your mouth, and the soup has a consistency of silk. The soup was cooked in a skillet. I planned to get a stainless steel pot to cook, but I fell in love with this 2 qt, 8 pounder. While cooking, It got hot so quickly, we had it on medium low most of the time. I would like to share this lovely recipe, just in time for the changing seasons! Many thanks and love to my sister.

Lovejoy Bakers

Lovejoy Bakers by Kitchen Undergrad

In Portland currently, and I am craving one of their breakfast sandwiches. You have to try the "Lovejoy Deluxe." You will not regret it! I promise. I wish I had a picture, but knowing myself, I probably didn't think of taking one until I was almost finished. Here is a picture of the bakery, taken last year.

    Here is their website.
Try not to get hungry! I dare you!

Sesame Bagel Summer Obsession

Sesame Bagel by Kitchen Undergrad
This summer I baked loaves and loaves of bread. But this particular bagel recipe is my favorite.
It's a recipe by Peter Reinhart, be sure to check it out!

Memorial Union @ Oregon State Univ.

Exactly a week until school begins again. No more dorms, thank goodness! It was a great experience though, that's for sure. Making new friends was a lot of fun, and you always had people around you. But, personally I wouldn't want live there again. Dorm food? Debatable. From this term, I will have my own apartment, with a kitchen. Yes, a kitchen! Utility fees are included already in the rent, so there's no limit to usage. So, this is what my blog will be about: food, cooking, and bits and pieces about college here and there. Enjoy.
